Oat and chia congee

This oat and chia congee is perfect for a new mama as it is warming, soft and easy to digest. It makes the perfect after birth brekkie or nourishing postpartum snack.

The best thing is you can mix whatever you want in here. Just make sure to soak the oats and chia seeds the night before so the phytic acids can break down, making them easier to digest.

Ingredients:

  • 2 cups of oats

  • 1/2 cup chia seeds

  • 1/2 cup quinoa flakes

  • Knob of ginger

  • Sprinkle of cinnamon

  • Anything else you want to add

Method:

Soak oats, chia seeds and quinoa flakes the night before. Then put all in a pot with some water, spices and boil. Take out any chunky spices (eg. cinnamon, ginger and star anise here). Add in anything else like collagen powder, stewed/mashed fruit, hemp seeds, milk and mix together. This can be eaten straight away and leftovers can be stored in the fridge or freezer in portions.
