Baby friendly banana muffins

These muffins are a great snack for both mama and mini. They are gluten free, dairy free and an ideal first muffin for your baby from about 8 months.

Ingredients:

  • 3.5 bananas

  • 8 small dried dates or 5 medjool dates

  • 1/2 cup coconut oil

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1 tbs hemp seeds

  • 2 cups desiccated coconut

  • 2 cups almond meal

Method:

Preheat oven to 180°C. Boil the dates with a little water to cover them in a small saucepan then mash together with remaining liquid. Mash 3 bananas together. Add remaining ingredients. Mix. Put them into 24 mini muffins. Slice half a banana into little pieces and place on top of muffins (can skip this step if you wish). Bake for 10 minutes.
