Immune boosting chicken noodle soup

This delicious soup is high in vitamin C and zinc. It contains bone broth and anti-inflammatory turmeric, making it the perfect warming immunity booster for the whole family.

Ingredients:

  • Whole chicken

  • Knob of ginger

  • Garlic (few cloves)

  • Onion

  • Capsicum

  • Broccoli

  • 3 carrots

  • Zucchini

  • Half a bunch of celery

  • Bunch of kale

  • Lemon

  • 1 tbs turmeric

  • 400ml coconut cream

  • Packet of vermicelli rice noodles

  • Ghee or butter

  • Water for bone broth

  • Apple cider vinegar for bone broth

Method:

Make bone broth by putting the whole chicken in a pot with all the veggie scraps and a splash of apple cider vinegar. Cover with water. After about 3 hours, take the chicken out and pull apart and throw the bones back in. Let the broth keep boiling for another couple of hours or longer. Cook the onion in some ghee or butter then add the garlic and ginger. Add all the veggies in (besides kale) with some bone broth and cook for about 30 minutes. Add the kale, turmeric, coconut cream, chicken, lemon juice and rice noodles. Cool for a few more minutes and serve.
